Winter 2010:

School

    • In October, ICE received approval from the U.S. Department of Education to start offering a range of TITLE IV student loan, grant, and funding programs.


    • ICE launched a blog, Diced, located at blog.iceculinary.com. Among other features, the blog follows Kelly Senyei’s journey through the culinary arts program.

    •  ICE’s Boot Camp Series was featured in a segment with Chef-Instructor Gerri Sarnataro on ABC News7. The segment was also broadcast in 6,500 NYC taxicabs.

    • ICE served as the culinary coordinator, Director of Student Affairs Andrew Gold prepared the appetizer course, and students assisted in the preparation of the annual Action Against Hunger gala in November, which also featured the dishes of Butter Executive Chef Alexandra Guarnaschelli and Le Bernardin Executive Pastry Chef Michael Laiskonis.

    Instructors, Alumni, and Students

    • Pastry Chef-Instructors Chad Pagano and Kathryn Gordon were contestants on “Food Network Challenge: Sugar Adventures,” during which they competed against three other teams in making sugar pieces inspired by classic novels.

    • Chef-Instructor Norman Weinstein was featured on an episode of the Discovery Channel’s “Emeril Green” called “Wok on the Wild Side,” during which he provided expert tips on how to cook with a wok.


    • Director of Baking Programs Nick Malgieri, Pastry and Baking Career Program Director Andrea Tutunjian and Pastry Chef-Instructors Michelle Tampakis, Jeff Yoskowitz, Kathryn Gordon, and Rebecca Millican spent a week in Switzerland for a chocolate and pastry seminar at Felchlin Condirama.

    • AP Travel released a story featuring Chef-Instructor Melanie Underwood and her sold-out cupcake classes that has run in more than 75 publications across the US.

    • Chef-Instructor James Briscione and his wife Brooke Parkhurst were featured in the fall 2009 edition of The Nest, which highlighted the duo’s cookbook for couples.

    • Chef-Instructor Erica Wides appeared on a TV Guide Network special, “Cast of Party of Five: Where Are They Now,” in which she cooks with her former student and “Party of Five” cast member Paula Devicq. 

    • Two ICE students won the 2009 Vegetarian Times Chefs' Challenge Contest. Emily Peterson (Culinary/Management ‘09) won in the entrée category for her Wild Mushroom Ravioli in Sage and Brown Butter Sauce, while Kathleen Willcox (Culinary ‘09) took the top prize in the dessert category for her Oatmeal Cheesecake Banana Split. Their recipes appeared in the magazine’s January 2010 issue. 

    • Three students participated in the 8th annual Allagash Brewing Recipe Contest that takes place at ICE every fall. Culinary and management student Jonathan Adler won the thousand-dollar prize with his dish, Allagash Pork Tenderloin with an Apple-Sage Curieux Sauce.

    • ICE students volunteered and participated in a range of events this fall, including the 4th annual StarChefs Rising Star Gala and International Chefs Congress, 2009 Japanese Restaurant & Food Show, Manhattan Cocktail Classic, Food Network’s New York Wine & Food Festival, Autism Speaks To Wall Street Third Annual Chef Gala, City Harvest’s Bid Against Hunger, Top Ten Pastry Chefs in America, 12th Annual New York Chocolate Show, Martha Stewart Pie Show, and Cook Eat Drink Live.

    Fall 2009:

    • For the fifth year in a row, ICE President Rick Smilow and Chef Andy Gold served as the culinary coordinators for the 2009 Action Against Hunger Benefit Gala, with Chef Alex Guarnaschelli (Butter), Pastry Chef Michael Laiskonis (Le Bernardin) and ICE student volunteers dedicating their time and skills to prep the evening’s fare.     • Eight students from ICE’s Pastry & Baking Career Program took their culinary skills to the small screen when they competed to be featured in a segment on The Martha Stewart Show. Each of the students submitted their own original savory pies for judging during The Martha Stewart Pie Show.
    • The flour went flying in ICE’s kitchens as volunteers and ICE instructors joined forces to bake more than 30,000 cookies, with all proceeds from the cookie sales going to Cookies for Kids’ Cancer.

    Other 2009 News:
    • ICE alumna Chef Gina DePalma (Culinary ’94) won the 2009 James Beard Outstanding Pastry Chef Award. Chef DePalma has worked as the pastry chef at Mario Batali’s Babbo Ristorante and Enoteca and is the author of Dolce Italiano, Desserts From the Babbo Kitchen (W.W. Norton & Co., 2007.)
    • Kathleen Lucier (alumnus of Culinary/Management '08) took home the silver medal at the LG Electronics International Cooking Competition, held recently in Dubai. Not only did Lucier represent ICE, but she also represented America against young culinary graduates from five countries.
    • The Institute of Culinary Education (ICE) announced the start of an alliance with the Istanbul Culinary Institute in Turkey.  This collaboration brings ICE instruction, methodology and teaching resources to this newly formed culinary school in Istanbul.  The union marks a first foreign venture for ICE.

       

      The 28 week, 760 hour program will be conducted in English and Turkish resulting in a Certificate Program of Culinary Arts.  The third institute involved in this venture, Istanbul based Bilgi University is providing registrar, admissions and housing services for the program. Located in the historic and trendy Pera section of Istanbul, ICI was founded by Turkish business woman/Chef Hande Bozdogan and is based in a new eight-story building that was completed in late 2007.

    • Earlier in the year:  ICE played a starring role in the March 1 season premiere of NBC's Celebrity Apprentice Mr. Trump doesn't waste any time getting down to business and immediately sends the celebrities into The Institute of Culinary Education's kitchens for a sweet challenge. From kitchen classrooms and cupcakes to world-class pastry chefs Michelle Tampakis and Chad Pagano, ICE was a central figure in the two-hour episode.     2008 Externship Report

    2008 was a record-breaking year for ICE's externship program. The school's Career Services Department placed 578 students in 327 establishments in 12 states and three countries. Gramercy Tavern, The James Beard Foundation's "2008 Outstanding Restaurant Award" winner, was the top externship location with 21 student placements. Equally impressive, the multiple restaurants headed or owned by chefs Mario Batali, Jean-Georges Vongerichten, Daniel Boulud, Thomas Keller and restaurateur Danny Meyer took a combined 83 student externs in 2008.

    Outside of the New York region, some of the nationally acclaimed restaurants that took ICE externs include Charlie Trotters (Chicago), Radius (Boston) and Orson (San Francisco).

    • On Dec. 17, 2009, Master Butcher Rudi Weid will be teaching a demonstration class, Holiday Roasts: The Royal Carving, during which he discusses roasting, resting and carving pork, beef and lamb.
    • On Dec. 18, 2009, James Beard-nominated author Francine Segan will be teaching a recreational class on a complete meal featuring chocolate.
